This recipe is another favourite of mine. They are simple to make and taste delicious. I’m yet to try making my own using raw fish as i’m too nervous i’ll give myself food poisoning but they taste great with shrimp, crab meat or just vegetables.

You will need the following ingredients:
- 2-3 sheets of sushi nori – you can usually pick this up in most health food stores.
- 1 cup of brown rice or Japanese rice – they are both fairly sticky rices, especially the Japanese one.
- 1 large cucumber
- 1 avocado & lemon juice
- Cooked crab meat or cooked shrimps – I’m yet to try it with raw fish!!
- Wasabi
- Ginger
- Soy Sauce
If you wanted to, to make it easier buy a sushi-roll mat, so far I have managed ok without one. Begin by preparing the rice as per the instructions on the packet. While this is cooking, prepare the sushi ingredients. Peel and de-seed the cucumber, slice in half length ways and cut into long strips. Cut the avocados in half, remove the pip and cut these into long strips as well. Squeeze some lemon onto the avocado to stop it going brown. Once everything is prepped and the rice is cooked and cooled slightly you are ready to start rolling.
Place the nori either on the mat, on some cling film or just on a plate. Spread a thin layer of rice over the nori leaving a slight gap all around the edge. Place the cucumber, avocado and crab or shrimp (in that order) along the center of the rice and roll. Using the mat gives a much prettier end result but that doesn’t matter so much – it all tastes the same.
Now add the ginger, wasabi and soy sauce to taste and enjoy with a nice Asahi beer or Sake!
