Quinoa Salad

This recipe involves a fabulous grain that often gets forgotten about – Quinoa.  Pronounced “keen-wah”.

Quinoa is low in calories, high in nutrients and is a great source of protein.  Who would have thought a grain could have been used as a source of protein!

This Quinoa salad is easy to make and very versatile.

  • 1 cup of uncooked Quinoa (this makes about 3 cooked cups)
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts
  • 1 bunch chopped cilantro
  • 1 bunch scallions chopped finely
  • 1/3 cup of extra virgin olive oil
  • 1/2 tsp dijon mustard
  • 1/4 cup balsamic vinegar
  • 2 garlic cloves crushed
  • 1/2 tsp salt
  • pinch of pepper

Boil the Quinoa as per the instructions on the box, once boiled leave to cool on the side.

Once it’s cooled add cranberries, cilantro, walnuts and scallions and mix.

In a small bowl combine the olive oil, vinegar, garlic, mustard and salt & pepper, whisk together and pour over the Quinoa. Stir all ingredients together.
