
I recently discovered this simple recipe at Kath Eats. It’s a great way to change up the way you eat your vegetables and it tastes delicious. Thanks Kath! It’s very simple to make and I am sure you will enjoy it as much as I do.
1 big bunch of Kale
2 tsp Olive Oil
2 garlic cloves (optional)
Parmesan Cheese
Preheat an oven at 350F/180C. Tear up the kale, removing all the stalks and place onto a baking tray, drizzle over the olive oil, crush the garlic and sprinkle on top along with the grated cheese. Bake in the oven for around 20mins until the Kale appears crispy and enjoy.

I make kale this way too and my children call it “kale chips”. They like it best topped with olive oil, salt, pepper and a dash of balsamic vinegar. If I have enough kale for a batch for myself, I put chili pepper flakes on mine.
